FESTIVE SEASON CHERRY RECIPES

Imagine a festive season table in white and gold with some gorgeous, colourful dishes. We got the idea for some beautiful festive season food when these recipes using cherries were shared with us.

Cherries have long been linked to the most magical time of the year. Their redness and rarity lend make them perfect festive fruit – plus, their season coincides with the holidays. They’re indulgent, whimsical and special, bringing extra delight to any occasion.

Cherry Time, South Africa’s foremost cherry producer, has shared some fab cherry recipes with us perfectly in time for festive feasting.


Cheesy Welsh Rarebit baguettes with pickled cherries and red onions

From the Slippery Spoon Kitchen

Ingredients:

The pickle:

2 cups Cherry Time cherries (halved and pitted)

1 red onion

500 ml white wine vinegar

100 ml lemon juice

1 cup castor sugar

3 tbsp pickling spice

The rarebit:

225 g grated strong cheddar

1 tbsp butter

2 tsp Worcestershire sauce

1 tsp mustard powder

2 tsp flour

4 tbsp beer/ Guinness or milk

1 baguette (halved)

Method for the pickle:

Heat the white wine vinegar, lemon juice, sugar and pickling spice to roiling boil. Add the cherries and sliced onion and remove from the heat. Cool overnight.

Method for the rarebit:

Place the cheese, butter, Worcestershire sauce, mustard, flour and a sprinkle of pepper in a saucepan. Mix well then add beer/ Guinness or milk.

Stir over a gentle heat until you have a thick sauce. Stop stirring and leave it to cool a little (the mixture can keep in the fridge for a few days).

Spread over the baguette halves in a thick layer and bake at 200 degrees for 15 minutes.

Slice up the warm baguette and serve with the pickle… decorate with fresh cherries of course.

Roast Fillet with Cherry and Brandy Butter

Ingredients:

250 g fresh Cherry Time cherries (pitted)

250 ml brandy

125 ml castor sugar

1 cinnamon stick

2 star anise pods

500 g butter

1.5 kg fillet (cleaned and trimmed)

125 ml Dijon mustard

Pop the cherries, brandy, castor sugar, cinnamon and star anise in a small saucepan on medium heat and bring it to the boil while stirring.

Once the sugar has dissolved, allow the liquid to reduce by half and then pour the liquid into a food processor, add the butter and process until smooth.

Roll the butter into tubes using clingfilm and refrigerate.

Rub the fillet with mustard and season.

Seal the meat on a griddle pan, and then place in a 180-degree oven for 20 min (medium-rare).

Rest the meat for ten minutes and then cut it into thick slices.

Arrange the slices on a board, add slices of cherry butter on top and decorate with more fresh cherries.
