No doubt we all know that leafy greens have huge health and mood boosting benefits. They are also great for helping our bodies boost collagen production. Enter this leafy greens soup which is my adaptation of a detox-friendly GOOP broccoli and rocket soup. Apparently, Gwyneth Paltrow regularly enjoys this soup, which has an abundance of vitamins and minerals, to keep her healthy glow. I changed the recipe a bit for a greater variety of leafy greens.
I’m going to drink this leafy greens soup over the next couple of days for an energy and health boost. Despite reservations, it actually doesn’t taste too bad at all. Because I’m using this as a lunch or dinner meal replacement, I decided to add some complex carbs in the form of a potato to thicken the soup and make it a bit more satisfying. The fats in the avocado help too. Instead of the potato and avocado, you can add some coconut milk which gives you a richer soup.
INGREDIENTS (About 6, 400ml servings)
1 tablespoon avocado oil
150g shallot or white onion, finely chopped
150g organic potato peeled and diced
15ml (1 tablespoon) crushed fresh garlic
380g head of broccoli, roughly chopped
100g kale, roughly chopped
200g baby spinach
40g wild rocket (for its wonderful pepperiness)
1 avocado (about 150g pitted and peeled) for creaminess and healthy, skin-loving fats
500ml organic vegetable stock
1 liter water
1 tablespoon freshly squeezed lemon juice
A large stock or soup pot
A stick or stand blender
TO MAKE THE LEAFY GREENS SOUP
This is super quick and takes about 30 minutes in total to prep and make.
Make sure you rinse all your vegetables thoroughly before you cook them.
Heat the olive oil in your pot. Add the diced onion and potato and sauté for 5 minutes with the lid on, stirring from time to time to prevent sticking.
Add the garlic, roughly chopped broccoli and chopped kale. Stir fry for another 5 minutes (lid on, but keep stirring from time to time) until the broccoli is a bright green.
Add the stock and water. Bring to a boil then turn down the heat and allow this to simmer for another 5 minutes.
Add the spinach and allow the spinach to cook down and wilt for a couple of minutes.
Remove from the heat. Add the rocket, avocado and lemon juice.
Using your stick blender, blend the soup in the pot until it is smooth Alternatively, if using a stand blender, let the soup cool a bit before pureeing it. Carefully ladle the cooled soup into your blender in batches and blend until smooth.
Serve with a swirl of coconut milk, some fresh rocket and a dusting of cayenne pepper for an additional bite. Now allow your body to enjoy the super healthy, green sludge. It may not be the most attractive or the tastiest, but the health benefits are amazing!
