With Spring around the corner and the weather heating up I always start to gravitate to fresh, crunchy ingredients. I do love to cook, but I don’t like to spend hours in the kitchen and I seldom follow a recipe. I recently saw an easy-to-make meal online which entailed fish and a fresh salsa. Here is my own twist on the fish and salsa dish. I call it Salmon and Summer Salsa because it’s bright and beautiful. It took me only 15 minutes to make (if you exclude the rice which I had already pre-made).
INGREDIENTS FOR SALSA:
(makes 2 portions)
Fresh coriander
2 tomatoes, diced
1 red onion, chopped
6 strawberries, chopped
juice of one lime
1 chilli, pitted and chopped (optional)
1 avocado, chopped into rough squares
Salt and pepper to taste
MAKE:
Mix all the salsa ingredients together.
Cook salmon according to directions, and lay on brown basmati rice. Spoon salsa over salmon and rice.
